Ingredients
· 4 eggs
· 2 ripe bananas
· 2 Tbsp. coconut flour
· ½ Tbsp. flaxseed
· ½ Tbsp. cinnamon
· 1 tsp. baking powder
· Coconut oil
for cooking
Instructions
Place all ingredients into a blender (I use a magic bullet).
Blend until smooth – about 10-15 seconds.
Heat coconut oil (1/2 Tbsp. at a time) in a medium size pan over medium heat.
Pour enough pancake batter into the pan to make a pancake about 3 inches in diameter.
Flip each side of the pancake for about 3-5 minutes, or until brown.
Repeat with the rest of the batter.
Add your choice of toppings and enjoy!
